Wine Marinade Recipes:

Lemon Garlic Wine Marinade
White Wine Marinade

Lemon Garlic Wine Marinade

2/3 cup dry white wine
1/4 cup fresh lemon juice
1/3 cup extra virgin olive oil
3 medium cloves garlic, smashed
2 Tbsp minced fresh, or 1-1/2 tsp dried herb of choice
Grated rind of 1 lemon

Combine all ingredients in a small bowl. Pour over fish or poultry in a shallow glass dish or heavy plastic bag. Cover dish or seal bag and refrigerate while marinating.

Makes about 1-1/4 cups.

Suggested Wine, Herb & Food Combinations:

Semillon: oregano, swordfish steak
Chardonnay: tarragon, chicken
Gewürztraminer: thyme, duck
Pinot Blanc: dill, fish, seafood

White Wine Marinade

1/2 cup dry white wine (non-oaky wine is best)
1/3 cup plus 1 Tbsp light olive oil
2 Tbsp fresh lime juice
1 Tbsp plus 1 tsp minced fresh, or 1 tsp dried herb of choice
1 Tbsp dried minced green onion Freshly ground white pepper to taste
Blend ingredients together in a small bowl. Cover and let flavors blend at least 20 minutes. Pour over poultry, fish or vegetables in shallow glass dish or in heavy plastic bag. Cover dish or seal bag and refrigerate while marinating.

Makes about 1 cup.

Suggested Wine, Herb & Food Combinations:

Chenin Blanc: basil, turkey
Sauvignon Blanc: lemon verbena, white fish Chardonnay: marjoram, chicken
Riesling: parsley, fish, seafood




Red Wine Mustard Marinade

3/4 cup dry red wine
1/4 cup extra virgin olive oil
1 Tbsp Dijon mustard 2 medium cloves garlic, smashed
1 tsp honey, optional
1 Tbsp minced fresh, or 3/4 tsp dried herb of choice Freshly ground black pepper to taste
Combine wine with remaining ingredients in small saucepan. Bring to boil, stirring occasionally. Cool before using. Pour over meat in shallow glass dish or heavy plastic bag. Cover dish or seal bag and refrigerate while marinating.

Makes about 1cup.

Cabernet Sauvignon: rosemary, lamb
Gamay Beaujolais: marjoram, duck
Zinfandel: thyme, beef
Pinot Noir: dill, salmon
Merlot: savory, pork
Barbera: basil, beef


Light Red Wine Marinade - Fat Free

2/3 cup light-bodied, fruity red wine
1/3 cup chicken broth or stock
2 Tbsp fresh lime juice
2 green onions, thinly sliced
2 Tbsp minced fresh, or 11/2 tsp crushed, dried herb of choice
A dash of bitters

Combine all ingredients in a small bowl. Pour over lean meat, skinless chicken breasts or hearty fish steaks in shallow glass dish or heavy plastic bag. Cover dish or seal bag and refrigerate.

Makes about 1 cup.
